
Lentil Cabbage Soup
I really love to utilize soup as a budget stretcher. It’s warm and satisfying. You can bulk it up with as many vegetables or budget friendly starches as you want, AND if you pair it with some fresh baked bread you can make it really enticing. This Lentil Cabbage Soup is a recipe my mom used to make for me when I was growing up. None of the ingredients by themselves sound extraordinary or spectacular, but when you put them all together you get a nutritious, filling dinner for only a few dollars!

This recipe is part of my go-to frugal meatless meal plan. I usually plan on making this lentil cabbage soup the same week that I make this Stuffed Cabbage Casserole because they each use half of a head of cabbage, so between the two I can make sure none of the cabbage goes to waste.

Lentil Cabbage Soup

This gluten free, plant based soup is full of protein, fiber, and vitamin C, and can feed a family for under $5!
- 3 medium carrots, sliced
- 1 small onion, diced
- 1 tbsp olive oil
- 5 cups water
- 0.5 head cabbage, chopped into small pieces
- 1 cup green lentils
- 1 cup tomato sauce
- 1.5 tsp sugar
- 1.5 tsp salt
- 0.5 tsp dried oregano
- 0.25 tsp pepper
1. Saute carrots and onions in olive oil until crisp-tender.
2. Stir in all other ingredients.
3. Bring to a boil. Cover, reduce heat and allow to simmer for 30-45 minutes.
4. Serve with salad and bread, or serve over rice.
